Abstract:
The present invention provides a production method which comprises a step for causing a phosphoric acid crosslinking reaction of a starting material starch by sequentially adding phosphorus oxychloride into a starting material starch slurry at a pH of 9-12 and a step for controlling the pH by sequentially adding an alkaline solution, and which is configured such that the concentration of the alkaline solution is increased during the phosphoric acid crosslinking reaction. A production method according to the present invention enables the achievement of a phosphoric acid-crosslinked starch that has a low phosphorus content and a high resistant starch content (for example, a pea-derived phosphoric acid-crosslinked starch which has a resistant starch content of 80% or more as determined by a resistant starch measurement method in accordance with the AOAC official method 2002.02, and a phosphorus content of 0.5% or less).
