Abstract:
The present invention is a method for producing a retort-packaged food containing, as a solid ingredient, at least one among meat and seafood. First, a food mixture is prepared, which contains at least one among meat and seafood, at least 0.2 mass% of a fatty acid ester, and glycine and in which the total content of the meat and seafood and the content of the glycine satisfy a predetermined relationship and the content of a lysozyme raw material is less than 0.001 mass%. Next, the food mixture is airtightly packaged. Thereafter, the airtightly packaged food mixture is sterilized under a condition of 5≤F0≤50 to obtain a retort-packaged food.
