Abstract:
The present invention addresses the problem of providing a method for producing scent-imparted foods, the method capable of effectively imparting scent to foods containing air bubbles or a gas, such as ice cream, meringue, a baked confectionery, a confectionery, a cream- or mousse-like product, a dessert, a beverage, and other products that utilizes a gas or that have a gas sealed therein. The problem is solved by introducing a carrier gas G containing a fragrant component 2 into a food product or a food ingredient 1, thereby imparting the scent to the food product or the food ingredient. As the carrier gas G, the following can be used: nitrogen; carbon dioxide; air; oxygen; argon; hydrogen; helium; ethylene; a refrigerant gas; a gas designated as a food additive; etc.
