Abstract:
Provided is a method for producing Yudane bread, said method comprising a step for kneading a portion of a starting starch material with warm water to prepare Yudane dough, and a step for mixing the Yudane dough thus prepared with the remaining starting materials and kneading the mixture, said method characterized in that at least one enzyme selected from the group consisting of a branching enzyme, α-glucosidase and glucose oxidase is added at the step for kneading a portion of the starting starch material with warm water to prepare the Yudane dough and/or the step for mixing the Yudane dough thus prepared with the remaining starting materials and kneading the mixture.
