Abstract:
A composition which comprises $g(a)-D-glucopyranosido-1,1-mannitol(GPM) and $g(a)-D-glucopyranosido-1,6-sorbitol (GPS-6), and optionally $g(a)-D-glucopyranosido-1,1-sorbitol (GPS-1), and is in a crystalline state. The composition is produced by a method comprising preparing a mixture containing isomaltulose and trehalulose from cane sugar through isomerization, hydrogenating the mixture optionally after removing trehalulose, to provide a raw material, and supplying continuously the raw material with seed crystals to a kneading apparatus having a thin and long cooling zone and discharging the resulting product continuously from an outlet thereof. The composition has little moisture-absorbing property, is easy to handle, is easy to be dissolved, and is less susceptible to abrasion and further can be produced in a short period of time, with a device which is small and easy to be made labour-saving, and in a manner taking less expense in time and effort.
