Abstract:
Navel orange shortbread and a method for manufacturing same. The navel orange shortbread comprises the following raw material components in parts by weight: 3-6 parts of bulk butter, 1-4 parts of raw white sugar, 4-8 parts of low gluten wheat flour, 0.1-3 parts of baking powder, 0.1-1 parts of full-cream milk powder, 0.1-1 parts of condensed milk, 0.1-0.5 parts of salt, 0.1-1 parts of full-cream pure milk, 0.1-0.8 parts of flour, 0.1-1 parts of Cointreau, 5-12 parts of orange jam, and 1-6 parts of egg yolk liquid. By means of adding the baking powder and the Cointreau to the raw materials, the fermentation effect of the raw materials of the navel orange shortbread is improved, such that there is more internal foam, and the taste is fluffier; and the milk powder, the condensed milk and the full-cream milk are added to the raw materials, thereby increasing milk flavor in the navel orange shortbread. A mold is provided, the raw materials are put into the mold, and the top face and the bottom face are baked at different temperatures, such that the surface is baked to be crispier, the taste and flavor of the navel orange shortbread are better, and the consistency of taste can be ensured.
