Abstract:
Provided is a packaged fish meat paste product that can be preserved at normal temperature for a long period and that exhibits excellent food texture, taste, and flavor. This fish meat paste product is obtained by storing fish meat paste food in a vacuum package, the product has undergone a heat sterilization treatment, and the fish meat paste food does not have a retort odor and is for preservation at normal temperature. When the fish meat paste food has been preserved in the vacuum package at 30±2°C for 90 days and is subsequently tested in compliance with the method described in Standard Methods of Analysis in Food Safety Regulation, Microorganism (Revised second edition, 2018), the fish meat paste food satisfies aseptic conditions where: the total viable cell count in a test using a standard agar medium is less than 300 CFU/g; the fish meat paste food is tested negative for coliform in an XM-G agar medium; the fish meat paste food is tested negative for Escherichia coli in an XM-G agar medium; and the fish meat paste food is tested negative for Staphylococcus aureus in an egg yolk-added mannitol salt agar medium.
