Abstract:
The present invention relates to a plastic fat composition for cookies which stabilizes the firmness of cookie dough and also can improve the mechanical properties during molding of the cookie dough. This plastic fat composition for cookies includes one item selected from tallow and fractionated tallow in an oil phase, and is characterized in that the total content of the tallow and fractionated tallow is 20-70 mass% of the total amount of components that constitute the oil phase. In one favorable embodiment, the firmness of the cookie dough can be stabilized by adding the aforementioned plastic fat composition for cookies to the cookie dough.
