Abstract:
The purpose of the present invention is to shorten cooling time while preventing the drying of the poultry carcass surface and preventing loss in meat weight and surface wrinkling and discoloration (freezer burn) in poultry carcass cooling processes. The poultry carcass cooling equipment is provided with: a conveyor chain (12) from which multiple shackles (14) in which the ankles of the poultry carcasses (w) are locked are suspended; an ice slurry-injecting device (16) along the conveyance path of the conveyor chain (12) for injecting an ice slurry (is) into the body cavities of the poultry carcasses (w); a sprinkling device (18) for sprinkling the surfaces of the poultry carcasses (w); and a cooling device (20) for blowing cold air on the poultry carcasses (w). The cooling device (20) is configured from: a first cooling chamber (21) for promoting the evaporation of moisture adhering to the surface of the poultry carcasses (w); a second cooling chamber (22) for preventing drying of the poultry carcasses (w) while cooling same; and a third cooling chamber (24) for melting the ice slurry (is) retained inside the body cavities of the poultry carcasses (w) and removing moisture from the poultry carcass surface.
