Abstract:
Disclosed is a process for producing D-psicose using starch, comprising the steps of subjecting starch to liquefaction and saccharification to obtain a first mixture; adding enzymatic metal ions into the mixture for isomerization to obtain a second mixture; and performing chromatographic separation on the second mixture after the removal of enzymatic metal ions, so as to obtain D-psicose.
