Abstract:

This invention provides a production process of a fatty acid as a constituent component of capsinoid suitable for use on a commercial scale. The production process is advantageous in that the fatty acid can be produced in a highly efficient and simple manner. There is also provided a salt or a crystal of a fatty acid that can easily purify a fatty acid and can stably store the produced fatty acid. The production process is a process for producing a fatty acid represented by general formula (5): wherein R, R¹, R², A, X, X’, m, n and p are as defined in the description, characterized by comprising the steps of subjecting a Grignard reagent represented by general formula (2): to a cross-coupling reaction with a halocarboxylic ester represented by general formula (3): in the presence of a copper catalyst at -5ºC to 10ºC to give a carboxylic ester represented by general formula (4): and hydrolyzing the carboxylic ester.
