Abstract:
The purpose of the present invention is to provide a novel reduced-sugar fruit beverage having improved flavor, and a method for producing the same. The present invention provides a fruit beverage in which the ratio of the beverage sugar concentration to the acidity (sugar concentration/acidity ratio) is 0.92 or less with respect to the sugar concentration/acidity ratio of a fruit juice not from the concentrate, wherein the fruit beverage is obtained by containing one or more sugar components selected from the group consisting of starch, a degradation product of starch and trehalose. The present invention also provides a method for producing this fruit beverage which is obtained by adding said sugar component to a reduced-sugar fruit juice.
