Abstract:
The present invention addresses the problem of providing a lipid composition which has a high phospholipid content and in which the composition ratio of docosahexaenoic acid (DHA) in the phospholipid is elevated. Provided is a roe lipid composition containing a DHA-bound phospholipid wherein the phospholipid content is 30% or greater and the composition ratio of DHA in the fatty acids constituting the lipid is 15% or greater. The composition of the present invention optionally contains an ether-type phospholipid. Also provided is a method for producing a food material, a cosmetic material or a medicinal material containing at least one member selected from the group consisting of α-glycerophosphocholine, sphingomyelin and dihydrosphingomyelin, said method comprising a step for obtaining a fraction containing at least one member selected from the group consisting of α-glycerophosphocholine, sphingomyelin and dihydrosphingomyelin from a starting material which is roe or a processed product thereof.
