Abstract:
Disclosed are a soybean polypeptide-based nanoparticle with high-load curcumin, and a pH-driven preparation method therefor and the use thereof. The method comprises: enzymatically hydrolyzing a soy protein isolate to obtain a soybean polypeptide; adjusting the pH to make same stable in an alkaline environment; then adding curcumin powder, stirring the mixture for a certain period of time, and then adjusting the pH to neutral; centrifuging same and then collecting a supernatant to obtain a soybean polypeptide-based nanoparticle with rich-load curcumin; and performing a drying treatment on the nanoparticle to obtain a soybean polypeptide-based nano-preparation with rich-load curcumin in a powder form. The prepared nanoparticle is of a nanoscale size, has an average particle diameter of less than 150 nm, and has a curcumin load amount of up to approximately 90 mg/g of soybean polypeptide. Compared with the traditional preparation method, the nanoparticle prepared by the method has the advantages of a good stability, high encapsulation rate and load capacity, a good biocompatibility, etc.; in addition, the preparation process does not involve alcohols and other organic reagents, is safe and free from toxicity and side effects, is simple in process operation and can be used for production on a large scale.
