Abstract:
A sterile canning sterilization system and method for solid food. The system comprises a food sterilization main pot (1), a can body sterilization accessory pot (3), a can cap sterilization accessory pot (4), and a canning and sealing cavity (2) for connecting the food sterilization main pot (1), the can body sterilization accessory pot (3) and the can cap sterilization accessory pot (4), wherein the food sterilization main pot (1), the can body sterilization accessory pot (3), the can cap sterilization accessory pot (4) and the canning and sealing cavity (2) are respectively provided with a steam inlet, an exhaust port, a gas outlet and a sterile nitrogen inlet. Performing heat sterilization on the food before canning and sealing makes the food directly come into contact with steam, such that the heat transfer is fast, the sterilization time is significantly shortened, and the taste of the food is effectively improved.
