Abstract:
A process comprising causing β-fructofuranosidase derived from a microbe belonging to the genus Bacillus and sucrose unassimilating yeast to act on an aqueous solution containing sucrose and lactose to thereby produce a sugar with a high content of lactosucrose wherein with respect to sugar composition, lactosucrose is contained in a proportion of ≥ 70% while the sum of 1-kestose and fructosyllactosucrose is contained in a proportion of < 3%. Further, there is provided a process comprising subjecting this sugar with a high content of lactosucrose to chromatography to thereby produce a lactosucrose of high purity wherein with respect to sugar composition, lactosucrose is contained in a proportion of ≥ 90%. Still further, there is provided a process for producing crystalline lactosucrose. Moreover, there are provided, produced by the above processes, a sugar with a high content of lactosucrose and lactosucrose of high purity.
