Abstract:
The present invention relates to the technical field of food, in particular to sweet potato dumpling flour and a preparation method therefor. The sweet potato dumpling flour provided in the present invention aims to overcome the defect of the absence of gluten in wheat dumpling flour, and the sweet potato dumpling flour is prepared by performing wet processing on selected sweet potatoes to produce sweet potato whole flour, such that the nutritional value of the sweet potato dumpling flour is greatly increased. The sweet potato dumpling flour is prepared by means of the steps of raw material sweet potato (selection), hydraulic conveying, cleaning and detritus removal, roller cleaning, crushing, fine crushing, separation, sand removal, spray drying and finished product packaging. The fineness, whiteness, transparency and boiling fastness of the sweet potato whole flour are improved, and defects due to frozen storage, whereby dumplings are prone to aging, cracking, water containment and taste deterioration, are overcome.
