CLAIMS

1. The invention relates to granola containing vitamin C and magnesium encapsulated with chitosan polymer nanoparticles and meeting the daily vitamin C and magnesium requirement in the daily taken portion, and it is characterized by containing;

• Oat meal at a ratio of 10-50%,

• Rice hazelnut at a ratio of 2-20%,

• Rice peanut at a ratio of 2-20%,

• Honey at a ratio of 2-20%,

• Water at a ratio of 2-20%,

• Currant at a ratio of 2-10%,

• Molasses at a ratio of 5-20%,

• Orange extract at a ratio of 0,1 -2%,

• Magnesium at a ratio of 0,1 -3%,

• encapsulated vitamin C at a rate of 0,1 -5%.

2. It is related to granola containing vitamin C and magnesium encapsulated with chitosan polymer nanoparticles, and the preparation of the vitamin C is as below;

• Feeding with ascorbic acid,

• Controlling the quality conformity of ascorbic acid,

• Encapsulating vitamin C with chitosan polymers,

• Centrifuging at 100-1000 RPM,

• Drying at 30-70°C for 24-120 hours,

• Grinding,

• Weighing,

• Homogenization with powder homogenizer.

Technical Field

The invention relates to granola containing vitamin C and magnesium encapsulated with chitosan polymer nanoparticles beneficial for human health, meet the daily vitamin C and magnesium requirement of the user, are highly nutritious and give high energy.

Background of the Invention

As a result of the life accelerated by technology, the eating habits of the people are changing day by day. People, particularly in the morning, have breakfast with granola, both as a healthy and easy to consume food in order to catch up with the places they will go to, such as work or school. Because granola contains useful nutrients such as dried fruit, oilseeds and oats and can be consumed quickly.

The benefits of the amount of the fibre contained in oat found in granola are too many for our body. With the fibres it contains, it also regulates the digestive system of our body. Furthermore, granola does not contain refined sugar like cornflakes. Granola does not tire the digestive system of the body with its invert sugar content such as honey or molasses.

Although a certain amount of vitamin C and magnesium are available naturally in all of the present granola varieties due to the compounds included, these are not at sufficient amounts to meet the daily requirement of an individual. Furthermore, there is no granola with vitamin C and magnesium added directly or encapsulated in the present granola varieties. Vitamin C that is also known as ascorbic acid and ascorbate is a vitamin found in a variety of foods and also sold as a dietary supplement. Vitamin C is an essential nutrient playing a role in tissue repair and the enzymatic production of some neurotransmitters. It is essential for the functioning of some enzymes in the body and is important for the immunity system. Vitamin C is a vitamin soluble in water. Therefore, water-soluble vitamin C is not stored in the body. The human body disposes the excessive amount of vitamin C not required from the body through urinary spillage. The body keeps a small reserve of water-soluble vitamins. However, regular vitamin C intake is required to prevent possible problems to occur within the body. Vitamin C is found in many fruits and vegetables, including orange, strawberry, kiwi, bell pepper, broccoli, kale, and spinach. Furthermore, vitamin C is used as a food supplement to support nutrition.

Vitamin C is one of the important components for our body. It has many benefits from collagen synthesis in the skin to the correct functioning of the immune system. In addition to this, it is an important antioxidant that reduces the risk of cancer. (G. Shklar, J.L. Schwartz, 15 Ascorbic acid and cancer, Subcell. Biochem., (1996) 233- 247. Shklar ve ark, 1996; H.M. Zhang, N. Wakisaka, Vitamin C inhibits the growth of a bacterial risk factor for gastric carcinoma: Helicobacter pylori, Cancer, 80 (1997) 1897-1903. Zhang and ark.1997). The antiviral features of vitamin C have also increased the interest in this vitamin in recent years. (Wang Y, Nessa BV. Sitespecific cleavage of supercoiled DNA by ascorbate/Cu(ll) Nucleic Acids Res. 1989;17:6915-26. Wang and ark.1989). Vitamin C is structurally a six-carbon keto lactone and contains four-hydroxyl lactone. For this reason, it has a very unstable composition and is transformed into dehydroascorbic acid by being easily oxidized under the influence of heat, light, and air. The performed researches show that vitamin C that is encapsulated with chitosan has much more stable structure against the effect of heat. (Keum-ll Jang and Hyeon Gyu Lee, Stability of Chitosan Nanoparticles for l-Ascorbic Acid during Heat Treatment in Aqueous Solution Journal of Agricultural and Food Chemistry 2008 56 (6), 1936-1941 Jang and Lee, 2008) And this prevents the loss of the effectiveness of vitamin C that is added particularly in granolas that are prepared with heat. In addition to this, encapsulation with chitosan also extends the shelf life of vitamin C. (A. Alishahi, et al., Shelf life and delivery enhancement of vitamin C using chitosan nanoparticles, Food Chem., 126 (2011 ) 935-940. Alishahi, 2011 ).

One of the vital minerals required for the general health of the body is magnesium. Acting as an auxiliary molecule in many biochemical reactions that are realized by enzymes, magnesium is mostly found in the bones within the body. Involved in reactions such as energy generation, protein formation, muscle movements, regulation of the flow in the nervous system, inclusion of magnesium in the day food intake is of importance. The best way to intake magnesium is to get it naturally from nutrients. Spinach, legume, soybean, almond, peanut, cashew, avocado, oatmeal, yogurt, and bananas are the nutrients that have high magnesium content. Besides these, magnesium intake is possible from drinking water and mineral water.

Magnesium is a molecule that is involved as a cofactor in the regulation of more than 300 enzyme systems in the body. It has many important functions from protein synthesis to muscle and nerve function, from blood glucose control to blood pressure regulation and bone formation. (Rude RK. Magnesium. The American Institute of Health (NIH) recommends adult men to intake 400-420 mg daily and adult women 310-360 mg daily. Various scientific researches showed that high magnesium containing diets drop hypertension (Kass L, Weekes J, Carpenter L. Effect of magnesium supplementation on blood pressure: a meta-analysis Eur J Clin Nutr 2012;66:411 -8. Kass et al. 2012), reduce the risk of getting type 2 diabetes (Schulze MB, Schulz M, Heidemann C, Schienkiewitz A, Hoffmann K, Boeing H. Fiber and magnesium intake and incidence of type 2 diabetes: a prospective study and meta-analysis. Arch Intern Med 2007;167:956-65. Schulze et al. 2007), reduce the risk of osteoporosis (Aydin H, Deyneli O, Yavuz D, Gbzu H, Mutlu N, Kaygusuz I, Akalin S. Short-term oral magnesium supplementation suppresses bone turnover in postmenopausal osteoporotic women. Biol Trace Elem Res 2010;133:136-43 Aydin et al. ,2010), prevent the formation of migraine pains (Sun-Edelstein C, Mauskop A. Role of magnesium in the pathogenesis and treatment of migraine. Expert Rev Neurother 2009;9:369-79 Sun-Edelstein et al. 2009). The invention relates to vitamin C and magnesium containing granola that ensures the daily intake of vitamin C and magnesium to the human body, obtained by adding to granola products and is encapsulated with chitosan polymer nanoparticles that can be protective against many diseases. Encapsulated magnesium and encapsulated vitamin C, which are not available in current granola varieties, however necessary for the human body, are added directly to granola. With the invention, when the user consumes the granola, s/he is fed with contained beneficial nutrients such as honey, currant, molasses, orange extract, encapsulated magnesium and encapsulated vitamin C. It directly meets the vitamin C and magnesium essential for the body.

Since it is prepared both at low temperatures and in the form of encapsulation, the granola product that is containing vitamin C and magnesium encapsulated with chitosan polymer nanoparticles does not cause any deterioration in the active ingredients of the materials, so, when the product is used, beneficial nutrients for the human body can be consumed in a healthy way.

The structural and characteristic specifications and all the advantages of the invention will be more clearly understood by the detailed explanation written below, and therefore this evaluation should be carried out by taking these figures and detailed statement into consideration.

Detailed Description of the Invention

In this detailed statement, the invention, granola containing vitamin C and magnesium encapsulated with chitosan polymer nanoparticles that are beneficial to human health, highly nutritious and highly energy-giving is explained for a better understanding of the subject below and without causing any limiting effect.

The present invention relates to the materials required for the preparation of granola containing vitamin C and magnesium encapsulated with chitosan polymer nanoparticles and their ratios by weight are as follows:

Oat meal at a ratio of 10-50%, Rice hazelnut at a ratio of 2-20%,

• Rice peanut at a ratio of 2-20%,

• Honey at a ratio of 2-20%,

• Water at a ratio of 2-20%,

• Currant at a ratio of 2-10%,

• Molasses at a ratio of 5-20%,

• Orange extract at a ratio of 0,1 -2%,

• Magnesium at a ratio of 0,1 -3%,

• encapsulated vitamin C at a rate of 0,1 -5%.

In the present invention, initially the process of preparing the vitamin C encapsulated with chitosan polymer nanoparticles is performed. The preparation process is as follows in order;

• Feeding with ascorbic acid

• Controlling the quality conformity of ascorbic acid,

• Encapsulating vitamin C with chitosan polymers

• Centrifuging at 100-1000 RPM,

• Drying at 30-70°C for 24-120 hours,

• Grinding,

• Weighing,

• Homogenization with powder homogenizer.

Oatmeal, rice hazelnut, rice peanut, honey, water, currant, molasses, orange extract, magnesium and encapsulated vitamin C containing granola, which is prepared at certain proportions with vitamin C encapsulated with chitosan polymer nanoparticles, are combined, so it becomes the final product and can be consumed in a healthy way.

It is obvious that a person skilled in the art can demonstrate the novelty revealed in the invention by using similar embodiments and/or can apply this embodiment in other areas of similar purpose used in the art. It is therefore obvious that such embodiments will not accommodate the criterion of overcoming novelty and in particular the known status of art.
