Abstract:
The present invention relates to a white chocolate-like food containing a highly unsaturated fatty acid-containing oil or fat, and addresses the problem of providing such a white chocolate-like food for which timewise changes in flavor are suppressed. The present invention was achieved on the basis of the finding that timewise changes in flavor can be suppressed by adjusting the pH, using acid or alkali, of a white chocolate-like food containing a highly unsaturated fatty acid-containing oil or fat to 3-6.2 or 6.8-8.
