Abstract:
Disclosed in the present invention are a whole grain coarse oat crisp biscuit and a preparation method therefor, which belong to the field of food and processing technology. The method of the present invention comprises the following steps: 1) cleaning, soaking and steaming an appropriate amount of oats; 2) freeze-drying; 3) preparing biscuit raw materials of low-gluten flour, oil, eggs, powdered sugar, brown sugar, baking soda, baking powder, salt and lyophilized oat granules; 4) mixing the oil, powdered sugar, brown sugar, baking soda, baking powder and salt under stirring; 5) adding eggs and stirring; 6) adding low-gluten flour and oat granules and mixing well the same; 7) molding by means of a mold; 8) baking; and 9) cooling and packaging. In the present invention, steamed oat granules are treated by means of freeze-drying, and are added directly to biscuits to make coarse biscuits with visible granules on the surface, thereby maintaining the color, flavor and shape of oats.
