Abstract:
PROBLEM TO BE SOLVED: To provide rice flour for bread, brown rice flour for bread, mixed flour for bread containing the rice flour or the brown rice flour which are capable of manufacturing voluminous and soft bread, and the bread.SOLUTION: The aforementioned problem is solved by rice flour containing amylose having an apparent content of 15 mass% or more and 30 mass% or less, and amylopectin having a very long chain of 2.5 mass% or more and 5.0 mass% or less, and a ratio (S/T) of long-chain mass% (T) and a short-chain mass% (S) of 2.5 or more and 4 or less. Mixed flour for bread contains such rice flour for bread, and bread is manufactured using the rice flour for bread or the mixed flour for bread.SELECTED DRAWING: Figure 1
