Abstract:
PROBLEM TO BE SOLVED: To provide a production method of a turmeric extract from which sugar or iron is removed, while remaining a useful component contained in turmeric, by thermally hydrolyzing the turmeric by organic acid.SOLUTION: In a production method of a turmeric extract, a rhizome of Zingiberaceae genus Curcuma is heated under an organic acid condition, and subjected to solid-liquid separation to obtain deposit, and to thereby produce the turmeric extract from which sugar or iron is removed, while preventing outflow of curcumin.SELECTED DRAWING: Figure 1
