Abstract:
To provide a powder composition capable of manufacturing cooking inside a salt crust simply in a short time by simplifying and shortening a period of time schedule to manufacture the cooking inside the salt crust by resolving problems of workability (process or time or the like) which may be generated when using raw chicken albumen in the cooking inside the salt crust, or generation of variation due to individual difference.SOLUTION: There is provided a powder composition for cooking inside a salt crust containing dried albumen powder and edible salt. There is provided the powder composition having percentage content of the dried albumen powder in a range of 0.5 mass% or more and less than 1.5 mass% based on the edible salt. There is provided a manufacturing method of cooking inside the salt crust having a process for manufacturing a salt dough by adding water to the powder composition and a process for covering a target foodstuff with the salt dough and burning the same. There is provided a manufacturing method of the cooking inside the salt crust in which water of 5 mass% to 15 mass% based on weight of the powder composition in the process for manufacturing the salt dough.SELECTED DRAWING: None
