Abstract:
PROBLEM TO BE SOLVED: To provide a γ-polyglutamic acid (γ-PGA) derivative of which water-retentivity and viscosity can be changed regardless of its molecular weight, and a production method thereof.SOLUTION: The invention provides γ-PGA derivatives having introduced phosphoric acid groups represented by Formula (1). Also provided is a method for producing phosphorylated γ-PGA comprising a culture step where a Bacillus microorganism having a γ-PGA producing ability is cultured in a liquid culture medium; a derivative forming step where a phosphoric acid or phosphate salt is added to the liquid culture medium for forming and accumulating phosphoric acid derivatives of γ-PGA; and a recovery step where the phosphoric acid derivative of γ-PGA is collected from the culture.SELECTED DRAWING: Figure 1
