To provide stable acidic protein food product having a pH area equal to or higher than the vicinity of an isoelectric point of protein, prevented from defects such as aggregation, precipitation and layer separation of protein grains.
The acidic protein food product is obtained using pectin de-esterified with enzyme as a stabilizer for acidic protein food product.
