Abstract:

To provide hard type bread crumb not containing not only a quality-improving agent such as yeast food, but also an emulsifier, fats and oils (shortening or the like), butter, and powdered skim milk, and to provide a meat processed product using the bread crumb.

There is provided the hard type bread crumb prepared by fermenting, baking and crushing mixed raw materials comprising at least, based on 100 pts.wt. of wheat flour, 0.1 to 3 pts.wt. of yeast, and 0.1 to 2 pts.wt. of salt. Provided is a meat processed product using a product obtained by immersing 100 pts.wt. of the bread crumb in a vegetable juice and 360 to 470 pts.wt. of crushed vegetables.
