Abstract:

To inhibit increase of ice crystal size as a result of dynamic process such as a recrystallizing which is a habit of ice crystals in storage of frozen food products.

A frozen composition comprising hydrophobin is provided. Also provided is the use of hydrophobin in inhibiting ice crystal growth and/or in modifying ice crystal characteristics in frozen food products.
