PURPOSE: To obtain an apparatus for pickle production, shortening a pickling time and making flavor of pickle uniform at completion of production of pickle, equipped with a container to store a pickling solution and pickle ingredients and a fermentation base prepared by previously immobilizing a ferment bacillus to a substrate.
CONSTITUTION: A substrate (e.g. one consisting of porous and spherical ceramic) 10 classified by color depending upon kind of ferment bacillus is immersed in a culture solution of ferment bacillus and the ferment bacillus is immobilized to give a fermentation base 9, which is packed into a storage case 11 and detachably held at the bottom of a container 3. The container 3 is detachably placed on a storage stand 2, an operating element 27 is rotated by a motor 25, a pickling solution H in the container is stirred by rotating a rotor 21 by magnetism and heat is radiated from a delivery hole 30 bored at the bottom face of the storage stand 2 to give the aimed apparatus for pickle production wherein a ferment bacillus preferentially grows more than wild bacilli, flavor of pickle is stabilized and operation and control are ready.
