Abstract:
PURPOSE: To obtain the title cheese having excellent cutting properties and excellent shape retention free from collapse of shape during heating and stirring by blending natural cheese with dried powder of ground fish meat by major grinding, molten salt, etc., and melting under heating.
CONSTITUTION: Natural cheese is blended with dried powder of ground fish meat by major grinding and molten salt and/or albumin and melted under heating to give the aimed cheese which is out into cubes and useful as an ingredient for fries.
