Abstract:
PROBLEM TO BE SOLVED: To provide a method for discriminating food and drink produced with a yeast simply and accurately.SOLUTION: The invention provides a method for discriminating food and drink which comprises: acquiring a yeast for producing food and drink or a yeast nucleic acid for producing food and drink from a food and drink; identifying the base sequence of an arginase gene of this acquired yeast for producing food and drink or yeast nucleic acid for producing food and drink; determining whether the identified base sequence matches five kinds of specific base sequences which are mutated and identified previously; and, when it matches them, determining that the food and drink has been produced with the yeast for producing food and drink having arginase genes in five kinds of specific base sequences.
