Abstract:

To provide bread having good flavor and taste, and well-balanced palatability especially softness, crispness and moist feeling.

The bread is incorporated with Tofu (bean curd) as a raw material for the bread. The bread is e.g. sandwich loaf. The bread is preferably natural yeast bread produced by using natural yeast. This invention further provides a method for producing the bread by using the Tofu as the raw material in addition to water and yeast. In the production method for the Tofu-incorporated bread, the bread is e.g. sandwich loaf and the yeast is preferably natural yeast.
