PURPOSE: To produce bread in a baking state of high quality by providing a heating means to heat the exterior of dough by a heater, a heating means to heat the interior of dough by means of microwaves, and a bread case disposed in a cooking chamber and provided at its interior with an impeller to knead a bread material.
CONSTITUTION: An impeller 4 is rotated with the aid of a kneading motor 9 to knead a bread material. In a subsequent fermenting process, upper and lower heaters 21 and 22 are energized, and temperature in a cooking chamber 1 is kept at 36°C. In which case, by irradiation of the interior of the cooking chamber 1 with a 50W microwave output for one minute through the motion of a magnetron 9, a fermenting process can be reduced to approximate half a conventional fermenting process. Since a turn table 3 is driven with the aid of a motor 13 and a bread case 5 is also rotted, uniform irradiation of dough with microwaves is effected. Since, in a baking finish process, irradiation of the cooking chamber 1 with a 50W microwave output is effected in a similar manner described in the fermenting process for one minute during the initial stage of the baking finish process, a uniform swelling can be produced.
