PURPOSE: To prepare high-quality vinegar in a short period in high yield, by rotating plate members to which acetic acid bacteria are previously attached, by carrying out acetic fermentation with bringing partially the plate members into contact with an unrefined raw material for vinegar and keeping the oxygen concentration in a specific range.
CONSTITUTION: The bearing 2 is set in the surroundings of the closed type fermentation tank 1 consisting of the box-shaped main body 1 a of tank in which an unrefiend raw material for vinegar is put and the semicylindrical cover 1b for sealing it hermetically, the revolving shaft 3 is supported on the bearing, the plural plate members 4 are supported on the revolving shaft 3 in a skewered way, the revolving shaft 3 can be rotated and driven by a motor, etc., and the plate members 4 are set in such a way that they are partially kept in the unrefiend raw material layer. The sensor 10 for detecting oxygen concentration set in the vapor phase part of the fermentation tank is connected to the on-off valve 6 fixed to the air inlet pipe 8 through the oxygen concentration regulator 11, and acetic fermentation is carried out by keeping always the oxygen concentration in the vapor phase at 5W60%(v/v) by the oxygen concentration regulator 11.
