Abstract:
To provide cakes large in volume, excellent in appearance, having rich egg flavor and sweetness, and having moist and soft meltability in the mouth, and to provide a quality improver for cakes enabling improvement in cake quality with respect to volume, flavor and palate feeling.
The cakes contain a heat-coagulated egg powder. The quality improver for cakes contains the heat-coagulated egg powder as an active ingredient.
