Abstract:
To improve accuracy in calculation of the amount of yeast used in an optional process.
In this method for calculating the amount of yeast to be used in an optional process so as to take the number of yeasts useful in the process constant, the size of yeast cell to be used is measured, the average cell size is calculated. The calculated average cell size and viability data are used to calculate the amount of yeast to be used.
