Abstract:
To provide compositions whose flavor, appearance, nutritional value, aroma and mouth feel are similar to mammal-produced milk.SOLUTION: Disclosed is a composition comprising about 0.3 g/L to about 1.1 g/L of κ-casein protein, about 1.25 g/L to about 4.9 g/L of β-casein proteins, one or more lipids at a final total concentration of about 0 wt.% to about 45 wt.%, one or more flavor compounds at a final concentration of about 0.01 wt.% to about 6 wt.%, one or more sweeteners at a final concentration of about 0.1 wt.% to about 6 wt.%, and ash at a final concentration of about 0.15 wt.% to about 1.5 wt.%, but not comprising animal-derived ingredients. In one embodiment, the composition is supplemented with casein produced by a recombinant host cell.SELECTED DRAWING: Figure 10
