Abstract:

PROBLEM TO BE SOLVED: To obtain casein hydrolyzate which is excellent in digestion and absorption, almost tasteless and odorless, excellent in storage stability and storable in the form of solution and useful over a wide range of application including beverage.
SOLUTION: This casein hydrolyzate has the following physical and chemical properties: a) the fraction of ≤100 dalton molecular weight amounts to ≥80wt.%, while that of ≥3,500 dalton is ≤1wt.%, b) the percentage of the free amino acids to the total amino acids of the hydrolyzate is ≤10%; c) the amount of tryptophan is ≤4mg per 1g of the casein hydrolysate, and d) the 10wt.% solution of this hydrolyzate has ≥99% transmission in the measurement with a glass cell 1cm thick using the light of 540nm wavelength. This hydrolyzate is useful over a wide range of application including beverage which is stored in the form of solution.
