Abstract:
To provide a cellulose composite having high viscosity in low concentration, high thickening effect and high thixotropy characteristics and emulsification stability.
The cellulose composite, which comprises 0.5-85 mass% of cellulose and 15-99.5 mass% of gellan gum, has a thixotropy index of 1.5 or more when the cellulose composite is prepared as an water dispersion of 0.5 mass% in terms of solid content.
