Abstract:

PROBLEM TO BE SOLVED: To produce a chewing gum with a high fruit juice content containing a fruit juice ingredient at a high concentration kneaded in the chewing gum, capable of sustainedly tasting the deliciousness and a favorable sweet taste of the concentrated fruit juice and sustainedly providing a pliant soft texture from the start of chewing and prevented from the moisture absorption during the preservation and to provide a method for producing the chewing gum.
SOLUTION: This chewing gum with a high fruit juice content contains a trehalose and a fruit juice and comprises the trehalose formed in a continuous phase in the chewing gum mass. The method for producing the chewing gum comprises (A) a step for mixing and heating the trehalose with the fruit juice and providing an uncrystallized trehalose and (B) a step for mixing the uncrystallized trehalose in the step (A) with a raw material for the chewing gum and separating out the crystallized trehalose.
