Abstract:

PROBLEM TO BE SOLVED: To provide a coating powder having a low hygroscopicity, excellent in storage stability, oxidization stability, expression and emission controllability each of core materials, and also excellent in taste, capable of imparting aroma/ flavor to food and drink accompanied with heat treatment when processing food such as a for microwave oven-use, baked confectionery, and suitably usable as an aroma/flavor enhancer, and to provide a coating agent to be used to produce the coating powder, a method for producing the coating powder, and food and drink containing the coating powder.
SOLUTION: This coating agent is obtained by the following process: making lipid solidified at normal temperature, and an edible water-soluble additive and/or edible high-molecular material are dissolved in a solvent to obtain a homogeneous solution, or emulsifying the dissolved lipid and a water solution comprising an edible water-soluble additive and/or an edible high-molecular material and mixing the thus emulsified resultant together with each other to obtain an emulsified substance. The thus obtained solution or emulsified substance is used as a coating to thoroughly coat the surfaces of respective core materials such as aromatic powder.
