Abstract:
To provide a cocoa powder extract with no roughness, causing no precipitation, and also having good flavor, and to provide food/drink containing the cocoa powder extract.
This cocoa powder extract is obtained by dispersing cocoa powder not subjected to alkali treatment into warm water 5-15 times as much as the cocoa powder, adding an alkali agent thereto to conduct alkali treatment while stirring the mixture at pH 7.0-8.5, and thereafter, drying soluble portions after eliminating insoluble portions from the mixture followed by heating the thus obtained resultant, and food/drink containing the thus produced extract is provided.
