Abstract:
PROBLEM TO BE SOLVED: To provide a method that makes it possible to produce coffee raw beans and roasted coffee beans with an enhanced sweet flavor and an improved flavor by applying treatment to coffee raw beans, and provide a method for modifying low-quality coffee raw beans, such as robusta, coffee raw beans of higher quality having a good flavor after roasting.SOLUTION: A coffee raw bean has a content of β-damascenone of 5 ppb or more in solid content.SELECTED DRAWING: None
