PURPOSE: To obtain hardly putrefiable concentrated cow's milk with a low lactose content, capable of suppressing the loss of aromatic components, improved in concentration ratio and suitable for blending in confectioneries, a method for producing the concentrated cow's milk and the confectioneries containing the concentrated cow's milk blended therein.
CONSTITUTION: The concentrated cow's milk contains 15-30wt.% milk fat and 12-18wt.% milk protein and has ≤15wt.% lactose content. Furthermore, a method for producing the concentrate cow's milk is composed of ultrafiltration treatment and vacuum distillation treatment of a raw milk under specific conditions is provided and confectioneries contain the obtained concentrated cow's milk blended therein.
