Abstract:
PURPOSE: To obtain a milk concentrate not causing coagulation even by handling at a low pH by dissolving a specified amt. of a salt in a milk concentrate contg. milk protein, butter fat, water and lactose. CONSTITUTION: A salt such as NaCl is dissolved in a milk concentrate contg. milk protein, butter fat, water and lactose by an amt. enough to block the formation of coagulated matter but not enough to significantly retard the fermentation of the concentrate, preferably by 0.5-4wt.% so as to prevent coagulation even by handling at a low pH of 4.9-5.5.
