Abstract:

PROBLEM TO BE SOLVED: To provide a sterilization apparatus capable of producing a sealed food, which can be distributed at ambient temperatures, by homogeneous continuous short time sterilization while keeping the quality as a food regardless of the size and shape of the wrapped product.
SOLUTION: This apparatus seals a food in a wrapping material, heats the sealed food by microwave in a pressured atmosphere of a mixture of water vapor and air in a space partitioned into two sections of a temperature rising part for elevating temperature by microwave irradiation and a temperature holding part for holding sterilization temperature, and subsequently lowers the temperature under pressure. By this apparatus, end effect and uneven heating of the conventional shortcoming characteristic to microwave heating are prevented. Further, by making the transfer speeds at the temperature rising part and the temperature holding part variable, the apparatus can be small-sized. The apparatus is provided with a pressure controlling device and a controlling unit for controlling all of the essential factors for continuous operation, and thereby continuous short time operation is achieved.
