The decolorized black vinegar with abundant nutritive value and good external appearance and the simple method for preparing material having dye component of the black vinegar absorbed on the material are obtained by adding ephippium or its degradation product to the black vinegar. The decolorized black vinegar and the material with absorbed dye component of the black vinegar obtained by the method can be used in various foods. The dye component having various functionalities can be easily concentrated by the method.
