PURPOSE: To reduce the moisture of the atmosphere in a container or to reduce the moisture of a water-containing substance such as food or medicine, by sealing a moisture permeable small bag filled with high purity anhydrous malt ose in a moisture-proof container or directly adding said maltose to the water- containing substance.
CONSTITUTION: Anhydrous maltose strongly takes-in about 5% by wt. of said maltose of moisture from a water-containing substance as combined water to come to a β-maltose hydrate crystal and can be used as the safe dehydrating agent in a moisture-proof container sealing dry food in place of a silica gel or calcium oxide. Further, by directly adding anhydrous maltose to water- containing food or water-containing medicine, the moisture content thereof can be reduce and said water-containing substance can be highly dried without using a heating means. As anhydrous maltose, high purity powdery maltose containing moisture in an amount of below 3w/w% and containing 85w/w% or more of maltose on a solid basis is used.
