To provide a semi-automatic pork hock/shoulder butt-deboning device which can mostly automatically debone the pork hock/shoulder butt in a good meat yield, while only partially manually striping the meats, and to provide a system for the deboning.

The semi-automatic pork hock/shoulder butt-deboning device and the deboning system using the device comprises an automatic deboning line for manually preliminarily striping, automatically removing scapula from shoulder butt, and then cutting off the shoulder butt, a line for manually preliminarily striping in the residual hock and automatically removing bones from the hock, and a line for automatically deboning the separated shoulder butt. The works are suspended, carried to each device in the lines, and subjected to the measurement of the sizes of the works at key points in the lines. The optimal positions of the works and cutters are calculated on the basis of the measurement results, and the works and cutters are automatically moved to the optimal positions to sequentially carry out the deboning operations.
