Abstract:
PURPOSE: To obtain an editable film fit for the packing, coating or separation of a product by suspending flour having a low or medium protein content as well as a plasticizer in water, homogenizing them by heating and carrying out application to the top a nonadhesive substrate and drying. CONSTITUTION: Flour having a low or medium protein content and a plasticizer such as glycerol are suspended in water, homogenized by heating and applied to the surface of a nonadhesive substrate made of polytetrafluoroethylene, etc., and drying is carried out to obtain the objective edible film inhibiting the drying and/or oxidation of a fresh or frozen food and suppressing the penetration of the oil of a fried food into other food.
