Abstract:

PROBLEM TO BE SOLVED: To obtain a title egg product which is superior in a quality point such as a tast, etc., with a high additional value by adding lactic acid bacteria originated from human enteric canal or bifid-vacteria to a liquid egg where sugar is added so as to execute fermentation.
SOLUTION: The egg product is obtained by adding the lactic acid bacteria originated from human enteric canal or bifid-vacteria to the liquid egg where subar (for example, mannose, fructose, galactose, scrose, lactose and mannitol, etc.) is added so as to execute fermentation. A lacto bacillus genus and an entelococcus genus being the resident lactic acid bacteria in enteric canal are mainly applied concretely. Besides, bacteria which belong to a bifie-bacterium genus are used as the bifit-bacteria. The eggs to be used is a hen's egg, a quail's egg and a duck's egg, etc.
